To assemble, slice each scallop into three or four discs (depending on size).
Arrange on a plate or a scallop shell, smear on a bit of chili paste, then top with crispy fried shallots.
We recommend you spritz generously with fresh lime juice and sprinkle with torn cilantro leaves (not included) for an absolutely perfect appetizer.
