Cora Cressy oysters pack a briny punch. A nice tender meat with a bright, very briny finish.  This is one of Togue's favorite oysters, and I bet you'll love them too.

The Source

Cora Cressy cocktail oysters are grown in lobster pounds along the Medomak River, right next to the wrecked ship "Cora Cressy", hence the name. Here's what the folks at Community Shellfish have to say about their Cora Cressy oysters:

Due to their proximity to the Atlantic Ocean, Cora Cressy Oysters benefit from fresh sea water with each incoming tide. This inflow of nutrients, coupled with the rich food supply of the Medomak River and Muscongus Bay, gives the oysters a strong briny flavor and a sweet finish.

Boe Marsh uses century-old lobster pounds as oyster beds which offer an excellent opportunity to create a controlled environment in the open ocean. At each low tide, the pounds are warmed by the sun promoting algae growth. This increased algae production provides extra food for the oysters twice a day

Why you'll love them

These are delicious, briny oysters grown by the good folks at Community Shellfish  in Bremen, Maine. Since I ship out of Community Shellfish's facility, I have the good fortune of taking them out of the water just minutes before shipment.  In years past they were petite, but we're getting plumper, larger ones lately so don't expect petites - these are standard size oysters, but not jumbos.

NOTE: the price of these oysters reflects the additional shipping cost since they add so much space and weight to the box.  But they're worth it;0
