Togue's Tips: We have the good fortune of working with many fellow passionate food lovers, and though this is sourced from Formaggio Kitchen in Cambridge, Mass, Togue first discovered it at 67 Gourmet in NYC. While there for a Dayboat Blue pickup, a diminutive but clearly powerful older woman came in and demanded of proprietor Martin Johnson "Do you have my Rose Harissa yet?" When he answered in the affirmative, she replied "Then I'll have to kiss you then" so Togue knew she'd have to try it. It's hard to describe the flavor here, but Curio Spice company does so this way:
Widely used and beloved throughout the Middle East, Harissa is a North African spice and condiment that is particularly popular in Tunisia for vegetables, meat, eggs, and breads. Ours has a mild-medium heat tempered by sweet rose petals sourced from a women's co-op in Morocco. Aromatic and addictive, our rose harissa blend shines as a dry rub or can easily be made into the more familiar paste. It brings savory, spicy, complex flavors to any dish.
