Togues tips: Togue LOVES fried shallots, so when she saw frizzled shallots in oil she was intrigued: wouldn't the oil render them soggy? The answer is mostly no: these shallots miraculously retain a bit of bite, but the crispiness is turned into more of a crispy chewiness. She had friends over to test out a number of items she sourced from Formaggio Kitchen in Cambridge, and this was the hands-down winner of all of them (and that's saying something, because they were all amazing). This is a fabulous topper for seared scallops or any seafood, but to be honest, it's good on just about anything: day-old rice, pasta, eggs, or anything. It's just so, so good!
