NOTE: We recommend you do NOT mix fresh and frozen within the same shipment.

Why you'll love them: It's really hard to find premium, preservative-free domestic shrimp, especially with their heads on! When Togue tried Lance's Shrimp Boil at the Local Catch Conference in Alabama last fall, she knew she wanted to bring them to her customers.  So we're offering this trial shipment of five pound bags of head-on shrimp. Make your own shrimp boil, make a delicious Tom Yum, or just make a shrimp stock with the shells and heads and use the meats as you would any other peeled shrimp.  Whatever you do, you'll be enjoying delicious shrimp while supporting small domestic fishing businesses.

Togue's Tips: Thaw these very differently from scallops! Be sure to thaw under running cool water immediately before use. When the shrimp thaw, enzymes within them react with oxygen to produce a dark pigment, and these enzymes are especially concentrated in the head. The water rinses away the enzymes and any pigment and yields a superior product.  The head and shell weigh very slightly more than the meat itself, so each bag will yield slightly more than 2 pounds of peeled meats.
