ITO Shoten has been making soy sauces and miso for over 200 years in Taketoyu, Aichi Prefecture, which is known for its dark miso. Ito Shoten is currently run by 9th generation Ito-San and his grandson.
We source this caramel-rich tamari from Formaggio Kitchen in Cambridge, Mass, who describe it this way:
Produced from only Japanese-grown soybeans and natural sea salt, slowly aged for three years in cedar casks, the tamari has a thick, caramel-ish, smoky, meaty, deep umami flavor that is well balanced, not very salty*. We recommend that you do not cook with this special brew, just use as a dipping sauce and/or brush on meats, fish or whatever you prefer.
*Togue notes that she thinks it's quite salty, although not in an unpleasant way - she just doesn't agree that it's "not very salty" Togue describes it as "rich, meaty tamari that is everything I look for in a soy sauce (tamari in this case). A little goes a long way - you do NOT want to cook with this!
The barrels used to age this tamari are all between 100 and 200 years old.
Favorite Uses: Use anywhere you'd use tamari or soy sauce as a condiment, NOT as an ingredient. I mean sure, you can use it as an ingredient, but it would be a waste (sort of like sizzling something in ultra premium EVOO). It's FABULOUS on raw scallops, but also on cooked scallops or on monkfish or chicken or asparagus or anywhere at all. Trust us, you'll love this!
