Togue’s Tips
The lobster is caught in the waters of Bremen, Maine, vacuum sealed and flash-frozen. The scallops are caught in the waters to the southeast of Nantucket. For traditional New England rolls simply pan fry the buns in the butter, sear the scallops and then stuff the buns with either lobster meat or seared scallops and add mayonnaise and lettuce (mayo and lettuce not included). You can also drizzle on a bit of melted butter for utter decadence. And feel free to get creative with the scallop rolls sprinkle with blackened or Cajun seasoning prior to searing; add bacon, scallions and chopped tomato; add a drizzle of hot sauce and blue cheese dressing.
