Includes: 

Fresh sushi-grade bluefin tuna caught by hook and line in the waters off Casco Bay, Maine.  If Casco Bay tuna is unavailable, we may substitute tuna from other areas in the Gulf of Maine, and will let you know. Steaks will vary between 1.3 - 1.7 pounds (large) and 3.5 - 4.5 pounds (jumbo).

Serving size:

Plan on 6-8 ounces per person.  One large steak will serve 3-4 hungry people; One jumbo steak will serve between 8 and 11 hungry people. 

Togue's Tips:

Bluefin tuna is prized for its high fat content and clean, salty flavor. The texture is really lovely - super silky, especially if you give it just a quick pan sear: don't overcook it! The color is beautiful, the mouth feel is creamy and soft - it almost melts in your mouth.  It's one of the nicest fish you can get.

A favorite light meal for Togue is a green salad with strips of raw bluefin tuna drizzled with coconut aminos and a side of french fries.  So good!

Our fish cutters do their best to approximate 1.5 or 4 pounds; packages will likely include just one steak but may occasionally include two pieces.

Our bluefin tuna is sourced from Portland, Maine based Upstream Trucking, who buys from Casco Bay fishermen who use hook and line to bring in these tasty beauties.  The tuna spend their summer and fall fattening up to get them through the cold winters, so fall tuna is the fattiest around.

Please note: tuna is a scromboid fish, which means it is important to keep it cool at all times. It will be shipped with ample gels to keep it cold in transit and you should plan on refrigerating it upon receipt.
