One pound of FRESH bay scallop meats (Argopecten irradians) from the waters around Nantucket, shipped within 24 hours of harvest. 

Serving Size:

2-4 servings per pound, depending on how you prepare them.  As a component of a dish (like scallops over pasta), plan on 3-4 servings per pound. As the main component of a dish, plan on 2-3 servings per pound.

Description:

These scallops have a unique, intense flavor.  They have a much more pronounced taste of the sea than what we're used to.  Whereas Maine sea scallops have a subtle ocean flavor, these scallops, when eaten raw, are more like a slap in the face (in a good way).  And of course, you can cook them too :)

These scallops are much smaller than sea scallops, and the size varies by area.  You should plan on getting somewhere between 60 and 80 to a pound.  

Each package is labeled with the name of the fisherman who caught them (it will be Jim), the area they were harvested and the date of harvest, all vacuum sealed and blast frozen for optimum quality.  Ordinarily they'd include the name of the boat as well, but since Jim's boat is so small it doesn't have a name, you will likely see "No Name" in that area.  

We recommend you purchase fresh items together (fresh scallops, live oysters, smoked seafood) and frozen items together, as mixing the two will diminish quality.

And remember: at checkout you'll select the shipping week, not the shipping day. We generally ship via UPS Next Day Air on Wednesday, meaning you'll receive your scallops on Thursday.
