One pound of fresh dayboat scallops harvested in the waters off Vinalhaven. There will be roughly 16 - 18 per pound. Vinalhaven scallops have a lovely minerality and a deep brine.
Serving Size?
It really depends on how you're preparing them. One pound will serve 4-6 as an appetizer, two to three as a meal. Many sites will tell you to serve 4 ounces (one quarter pound) per person, but Togue likes to plan on at least 1/3 pound per person.
Togue's Tips:
Scallops wrapped in prosciutto is a super easy appetizer. Just wrap prosciutto around the perimeter of the scallop, affix with a pick and sear as you normally would. No worries about getting bacon crispy - prosciutto is ready to eat whenever the scallops are cooked to your liking.
Scallops will be packed in cryovac bags and will last in the fridge for 6-7 days after receipt, or you can place in a freezer bag and freeze for longer storage.
