Includes: 2 pounds of frozen Maine Dayboat scallops (Placopecten magellanicus), harvested in the northernmost waters of the Northern Gulf of Maine Scallop Management Area, off Cutler, Maine by Troy Ramsdell in April, and; 2 pounds of frozen Nantucket Bay scallops (Argopecten irradians), harvested by Jim Sjolund in the waters off Nantucket.

Serving Size: 2-4 servings per pound, depending on how you prepare them.  As a component of a dish (like scallops over pasta), plan on 3-4 servings per pound. As the main component of a dish, plan on 2-3 servings per pound.  Both of these are delicious served as crudo, and the Nantuckets in particular make a fabulous ceviche.

Description:

Both of these varieties were harvested by dayboats, and both of them are a little smaller than the scallops we usually offer.  

The bay scallops have a unique, intense flavor.  They have a much more pronounced taste of the sea than what we're used to.  Whereas Maine sea scallops have a subtle ocean flavor, these scallops, when eaten raw, are more like a slap in the face (in a good way).  And of course, you can cook them too :)

The sea scallops from the northern portion of the Northern Gulf of Maine are smaller than what we usually offer since they come from deep waters with less feed available.  They have a very mild flavor and sear fabulously.

NOTE: We recommend you do not mix fresh and frozen items in one order.  We prefer to ship frozen items with dry ice, which will freeze fresh items.
